On the basis of research, interviews with experts and inspections of companies in practice, the current practice of cleaning and disinfection in various branches of the food industry is analysed and it is shown what possibilities there are for improvement in order to make these measures as environmentally friendly as possible without endangering food safety. The focus is on companies that process organically produced raw materials.
