Talk 040 | How well can we grind flour ourselves, Christoph Magnus Kringel?

In what quality can I grind my own flour at home? And is the result actually suitable for baking good bread? For his Bachelor's thesis in the Department of Oecotrophology, Christoph Magnus Kringel compared various milling methods and results of electric kitchen appliances and a household grain mill with industrially produced whole wheat and rye flour.
A lot of background knowledge of baking technology went into his study, because Christoph Magnus Kringel was once Hesse's best up-and-coming baker. In this episode, he describes the results he arrived at to presenter Mariana Friedrich.

Talk 039 | How can professional female footballers watch their diet, Anna Friedmann?

Sport and nutrition, they have to go together, don't they? For many professional athletes, there is hardly any time for a suitable healthy diet in addition to training. For her bachelor's thesis in the Department of Oecotrophology, Anna Friedmann talked to professional female footballers about their nutrition and investigated the extent to which nutrition intervention processes from dietetics can be an effective tool for healthy nutrition in professional sport. In the process, it also became apparent: Nutritional counselling is more common among professional athletes, but is a rarity among professional female athletes - even though the negative effects of poor nutrition on performance are widely known.
Anna Friedmann talks about how she worked with female athletes and why nutrition in sport is a gender issue in this episode of the podcast.

Insect meal in food is no longer uncommon. Several insect species are already approved as food in the EU. They are rich in protein and are said to be able to solve some of the world's nutritional problems.
Christian Schnorr is doing his PhD in food technology and wants to find out whether mealworms can also be fed optimally with plant residues. He explains how he is investigating this and what it has to do with space missions in the podcast.

Talk 037 | What potential do plant proteins offer for our nutrition, Lena Langendörfer?

We consume proteins every day. Our body needs them for muscle building, immune defence and much more. At the moment, it is mainly meat and dairy products that supply us with these important substances. But the more we question our diet, the more we look for plant-based sources of protein. You can already find yoghurt made from soy, spreads made from pea protein and cheese made from nuts on the supermarket shelves.
In her doctorate in food technology, Lena Langendörfer is investigating what potential plant proteins offer - with a view to taste, texture and the usual enjoyment. In the podcast, she talks about how difficult it is to make people curious about new products and what food science is doing to promote acceptance. She also gives an insight into how a scientific paper is set up.

After 35 episodes of our science podcast, we want to make a change. We have prepared a series for the summer semester 2023. Host Mariana Friedrich meets young scientists from the departments of Food Technology and Oecotrophology who are working on food innovations, but also deal with very practical questions.
In five episodes, listeners are immersed in concepts and ideas on how the world of food and nutrition could change. The topics include the potential of plant proteins, a functioning circular economy for breeding mealworms, nutrition in professional sports, flour and flour mills, and the question of whether distributed ledger technologies such as blockchain could be a useful tool for declaring organic food in a simple and comprehensible way for all parties involved.

Talk 035 | From diesel to electricity: Why are e-trucks the solution for heavy-duty local transport, Professor Zimmermann?
03.08.2022
Heavy-duty local transport - i.e. all the trucks that travel through our cities and regions every day to transport goods from A to B - is a lever for the energy transition. If we used electricity instead of diesel for these transports, it would not only be much quieter in our cities, we could also save a large amount of CO2. However, there is hardly any real data on which scenarios are possible for e-trucks and what the infrastructure must look like.
A project at Fulda University of Applied Sciences wants to change that. An e-truck is driving through the Rhine-Main region, closely observed by scientists under the guidance of Professor Dr Boris Zimmermann. The team collects huge amounts of data and evaluates it. The practical partner is the building materials dealer STARK Deutschland GmbH.
What are the concrete goals of the project? And how can science contribute to boosting important developments for decarbonisation? Moderator Mariana Friedrich talks about this with Professor Dr. Boris Zimmermann.

1.65 million people in Germany are dependent on the services of the Tafeln. But who are these people? Why are they in this situation? 30 percent of students in Germany are poor, warned the Paritätische Wohlfahrtsverband in mid-May. In total, more than 13 million people in our country live below the poverty line. 1.65 million people depend on the services of the food banks to feed themselves. A group of students from the Department of Oecotrophology under the guidance of Prof. Christoph Klotter took a look at what the situation looks like on the ground in Fulda. They wanted to find out who the people are who go to the food banks. What does food poverty look like in Germany?

Rituals are important for us humans. Everyone has them. But what are they? Why do we need them? And how can we use them in a targeted way? Moderator Mariana Friedrich talks about this with Dr Antje Pfab. Antje Pfab is a research assistant at the Department of Social and Cultural Sciences at Fulda University of Applied Sciences and works as a freelance coach and supervisor. She has investigated the significance of rituals for therapy and coaching. In 2021, her book "The Importance of Transition Rituals in Reflexive Counselling" was published.

Talk 031 | Pesticides in our food - how does the EU protect us?
04.05.2022
Is our food contaminated with pesticides? So-called food scandals always lead to great uncertainty among many people. "Hardly anyone knows what high standards apply in the EU," says Paula Kuchheuser. In her Master's thesis, the oecotrophologist dealt with the European rapid alert system RASFF. Food and feed that exceed EU-wide limits and pose a health risk are reported there.
She has analysed more than 4,600 of these reports from the past 20 years. She discusses with moderator Mariana Friedrich what can be gleaned from the data and how it should be put into perspective.

When life is subject to stricter rules anyway because of a disease, a pandemic can shake things up. What effects did the lockdown measures have on people with diabetes mellitus? The team led by Professor Dr. Claudia Eberle from the Department of Nursing and Health examined this in a meta-analysis based on 33 studies from ten countries on more than 4,700 patients. The immigration movement presented Germany with a major challenge in 2015. In social work, many actors relied on being able to build on the experiences of migrants already living in Germany. For her doctoral thesis, Tatevik Mamajanyan looked at why this worked less well than expected. The researcher in the project "Dialogue Processes and Travelling Exhibition for a Successful Coexistence in the Immigration Society", DIWAN for short, a RIGL project, investigated how the relationship between immigrants and those who have lived in Germany for a longer period of time has developed since the flight movement in 2015 and worked out stages of integration.

According to a study by the Robert Koch Institute, every sixth school child in Germany has at least short-term mental health problems. The Corona pandemic has further aggravated the situation. Professor Dr. Henning Daßler from the Department of Social Work is working within the Regional Innovation Centre Health and Quality of Life (RIGL-)Fulda to develop sustainable prevention strategies with schools. The aim is to reach out to students across the board and inform them about support services for dealing with mental stress.
