Doctoral research group Health and Nutrition

The doctoral research group "Nutrition" is currently embedded in the doctoral research group "Health and Nutrition", a sub-project of the ProGEPP (Programme for the Recruitment and Development of Professorial Staff) project, which is supported by funds from the federal-state programme FH-Personal.

The aim of the colleague programme is to provide funding and support for doctoral projects in the disciplines of Nutritional, Food and Consumer Sciences, such as

  • Nutrition and health
  • food sciences
  • Society, business and sustainability
  • Catering and supply

This involves academic supervision of the doctoral degree from familiarisation with the subject to the degree of the dissertation. Regular bachelor's and master's degrees, needs-based continuing education and qualification measures and the organisation of conferences create the best conditions for doctoral students to successfully complete their dissertation. The doctoral degree opens up a variety of career paths, for example a HAW professorship or leading positions in research institutions, the food industry, institutions in the public health system or non-profit organisations.

Following the start-up funding from ProGEPP and the special funds from the HHSP, it is planned that the "Nutrition" colleague programme will become permanent at ELVe from spring 2027.

The doctoral research group "Nutrition" is a facility of the Department of Nutritional, Food and Consumer Sciences. It is organisationally affiliated to the research centre for nutrition, food and sustainable supply systems (ELVe).

At the Doctoral Research Centre Public Health: Doctoral degrees are awarded at the Doctoral Research Centre Public Health at Fulda University of Applied Sciences. The formal requirements can be found on the website of the doctoral research centre Public Health (PZPH).

As part of a cooperative doctoral programme: In addition, you have the option of obtaining a doctorate as part of a cooperative doctoral programme at a university. The University of Kassel is a co-operative university of the Fulda University of Applied Sciences.

With a monograph or cumulative dissertation: It is possible to obtain a doctorate with either a written doctoral thesis (monographic dissertation) or several publications from recognised (peer-reviewed) academic journals (cumulative dissertation).

Doctoral candidates introduce themselves

Description: Nutrition and food are important areas of public health. In the European Union, food safety has long been recognised as one of the top priorities of public health (nutrition). Following a fundamental reform of food law in 2002, food safety and public health protection are firmly anchored in European food law and the EU is recognised globally for its high safety standards. However, deficits in regulation and monitoring are becoming apparent in the increasing online food trade, which pose a potential risk to human health and require action. The aim of the doctoral project is an empirical investigation of food safety and consumer health protection incidents in the online food trade and the identification of suitable risks.

Brief description: There is a moral assessment of diets. This can be seen in everyday nutrition, for example when meat consumption needs to be justified. In this way, individual dietary decisions are linked to the worsening problem of climate change. Sustainability is demanded and, as a result, nutritional practices are assessed as sustainable or irresponsible. Moral communication is characterised by the fact that individual moments of disregard or respect are conveyed in the communication. The dissertation will analyse the influence of moral communication in the context of sustainable nutrition. A discourse analysis and focus groups with representatives of different social milieus will be conducted.
