Teaching kitchens - Inventory and recommendations for standardised concepts in medical rehabilitation (LeKER)

Teaching kitchen events are an important component of behaviour-modifying measures in medical rehabilitation. Binding, standardised guidelines for the facilities of educational kitchens and concepts for therapeutic intervention are still missing. The objectives, content and methods used in teaching kitchen events are left to the individual expertise of the nutritional therapist in charge. Moreover, there is hardly any empirical research into the expiries of teaching kitchen events.

The aim of the project is to develop a practice-oriented framework concept with recommendations and materials for teaching kitchen events in medical rehabilitation. In the end, everyone should benefit from the results of the study. The results are therefore expected to be communicated via the German Pension Insurance Association (DRV Bund) in 2025.

The LeKER project is a multi-method development study. In the first step, the status quo in rehabilitation facilities was recorded from 18/09/2023 to 24/10/2023 using a nationwide, e-learning modules survey (questionnaire). The focus here was on the staffing and structural resources as well as the areas in which teaching kitchens are used.

In addition to the survey, a literature review was conducted on pass concepts and (evidence-based) approaches to teaching kitchen units. A Delphi process will be carried out based on the results of the survey and research. The expert advisory board required for this is multidisciplinary (nutritionists from practice, physicians, psychologists, educators, representatives of the DRV-Bund, professional associations and professional organisations). Finally, consensual recommendations are derived.
