Information on the consumer test in daycare centres, primary schools and secondary schools

Dear parents, dear students,

In the WKErBo (pea-bean value chain) research project at Fulda University of Applied Sciences, we are developing a sustainable meat alternative from local peas and field beans - completely additive-free and in organic quality.
With the aim of determining the acceptance of these products among children and young people, we are asking for the support of your children as part of a consumer test planned by Fulda University, Food and Consumer Sciences (Nutritional, Food and Consumer Sciences department).

Our products are offered by the antonius kitchen as part of the lunchtime catering in your daycare centre or school. All children and young people who have chosen the vegan menu can take part. The tasting will take place in the familiar surroundings of your cafeteria.
Two different products will be offered, each with a different flavour:

  • Yellow pea and field bean medallions with onions and mustard
  • Yellow pea and field bean balls with herbs

The tasting takes place on two different days - with only one type of product per day - embedded in a regular menu.

The children assess the products based on questions about the following characteristics, for example:

  • Appearance
  • smell
  • flavour
  • Texture (mouthfeel)
  • Overall acceptance

The questionnaires are designed to be age-appropriate and easy to understand:

  • Daycare centre children receive a questionnaire with 3 smileys to circle.
  • Primary school children receive a questionnaire with 4 smileys and - depending on their age - up to two additional simple questions.
  • Secondary school pupils scan a QR code with their mobile phone and access a digital questionnaire via the RedJade program. You are welcome to scan the sample QR code below to get an idea of the questionnaire.

The data is collected anonymously so that data protection is fully guaranteed.

The children/young people are asked to scan the QR code with their mobile phone and take part in the online questionnaire. You are also welcome to scan the QR code together with your child in advance and view the questionnaire.
